We issue some POs in which we will physically pick up the goods. Is there a way to change the Ship To details on the Shipping tab of a PO to reflect a Pick Up rather than a shipment?

I am referring to the Ship Via field on the Shipping tab of the POs.
Set Ship Via up in Ship Via Codes screen, found in preferences section of both Purchasing and Sales Orders. The Ship Via prints on the Purchase Order. When Ship Via says “Will Call” the vendor will recognize you are picking up your merchandise.
