Up until recently our company has solely used production orders for our manufacturing process. We have found that we can use the Kit Assembly process and still have the lot tracking capabilities that we desire. The one thing that we loose out of the box is the ability to track labor associated with the kit assembly and have that labor cost be allocated to the item being created.

Has anyone come up with a process for this?

I have found that labor transactions require production order numbers. I also found that didn’t actually have labor costs in our system so we were tracking labor hours solely and not the cost of those hours.

You can add labor as a non-stock item in kit specifications.  However, it will not be attributed to a specific employee and you’ll lose the clock in/out capability.  You can override the default number of hours in kit assembly when assembling a kit, but it’s not truly meant to capture production labor, rather just associate labor/overhead or other non-stock costs with a kit assembly.
