we have a multi company & multi branch setup. How can 1 setup the warehouse & location for the items being undergoing intercompany transactions across branches & companies as we only have the option to set a single default WH & Loc.

The default Warehouse and default location fields on the inventory item are global item defaults and support only a single warehouse/location combination. In a multi-company and multi-branch environment, warehouse selection of intercompany transaction is generally controlled at the transactions level and through branch/warehouse configuration rather than through multiple item defaults. If you require warehouse/location defaults to vary automatically based on the company or branch initiating the transaction, this is not something possible, since Out of Box does not provide multiple defaults warehouse/location settings per inventory.
I believe this requirement needs a customization
