We are looking to start using Incoming Mail Processing to automate web inquiries.
We would prefer not having a dedicated email account for this, is it possible to conditionally create a lead based on who the sender of the email is?

I was able to confirm that this conditionally functionality is not supported. It sounds like you have a grasp of the workaround -- where you could configure your email system to route emails from a certain email address to a particular mailbox. Then, in Acumatica, you could configure email processing to create leads for emails that arrive in that inbox.
