Is anyone experiencing issues when clicking into a project or task, the new window opens an empty project or task instead of the populated one you opened up? If I then go back to the original screen and open it again, the correct project or task will open up.

Have any customizations been published for these screens? This could be the cause of the issue you're facing.
If no customizations have been published, try resetting the caches from the 'Apply Updates' screen. (If you're encountering this issue on production tenant, try doing this during non-working hours to minimize disruption.)
