I want my purchasing team to be able to maintain the Vendor information on Stock Items, however I don’t want them to be able to make any other changes on the Stock Items.
Is this doable through permissions/user access?

Based on the Access Role we can set permissions using Access rights by screen,
In your case set Access Rights to “View only” for all the sections except Vendor.

Do I set the access on Stock Items and all the sub-sections of Stock Items to View Only?
Or do I need to set Stock Item to something different?
And would Vendor be set to Delete?

Set “Delete” for Stock items,vendor section and “View only” for other sections.
