Is there a way to copy an endpoint that was created in a Test instance to a Prod instance? It does not appear these came over from a snapshot and I would have assumed they would. Am I missing something or do these have to be manually recreated between instances?

Customization projects are, by default, not included in a snapshot.
You can include the Web Endpoints in a customization project which will let you move them around.
This post talks about how to create a custom snapshot configuration that will include your customization projects (not sure if it includes web endpoints, though).
