We’d like to have an email sent with project details upon activation of projects for certain customers. Does anyone know how we could do that?

You could create s GI with the fields you require for the Email where the project is active.
Then create a Business Event based on the GI with the trigger condition of Record Inserted and subscriber of Email them configure your Email Template.
So once you activate the Project the GI will pick it up as a new row and this will trigger business event and email.
