Is there a way to restrict users to only be able to edit activities created by them and not be able to edit ones created by colleagues i.e. you can only edit your own activities?

Unfortunately, no. You can only modify their ability to edit/view at the screen level.  Beyond that, you can’t modify their ability to edit based on the content within that screen being previously modified by them or someone else.
