We use project tasks for our design team to log into - giving us time activities in the Billable time field - however, we dont bill out their labour - but we would like to capture in a GI or on our dashboard, how each project task is tracking by employee.
Anyone done this already?

I'm not entirely sure I understand your full requirement, but if you're looking to retrieve data based on Employees, Projects, and Project Tasks through a Generic Inquiry (GI), you can leverage Acumatica’s built-in GI named "DB-EmployeeTime".
This GI can give you a good head start. I recommend duplicating it and modifying it to suit your specific needs.

In our upgrade we lost the file that gave us that report.
Once MYOB Acumatica fix it, I will then be able to set the GI up.
