Our company purchases trees from farmers. These farmers require 25% deposit or prepayment upfront and then the remaining balance is due 2 weeks before shipment. I’m wondering what the best way to set up these credit terms are?
All of these payments will occur BEFORE we receive product into Acumatica.

Please refer to how to create "Credit Terms" below.

In my opinion. For the first 25% payment, we create Prepayment.

Then to track the remaining 75% payment, we create GI, Business Events or Tasks to track.
