Not really in production, but you can do this by using alternate BOM’s with different components before sending to production. These alternate BOM’s can be for the same finished goods or components. You just need to select which BOM you want to use before creating the production order and it will consume the materials desired.
This is the current workaround until Acumatica accepts our request for the alternate parts in a BOM idea… But it’s been 3 years so far… Not holding our breath haha… There’s always next year ;)

AFAIK manually is the only way. Delete and add a new material in your Production Order Details screen. If the order already has material issued, mark your old material as 0 quantity instead of deleting.
