I have a GI that seems to keep defaulting to a value when i have no default value set. The report works however its just annoying to have to change the value every time We really dont use the “stocked” class for much.

It seems you might have customization for the ITEM CLASS field in the Stock Items screen that you defaulted to STOCKED.
To confirm this, in your instance just open a Stock Items screen click on the (+) plus to create a new stock item, and then check the Item Class field should be empty like below.
