Has anyone ever performed or set up different invoice templates for different clients/customers in field services? Curious as to where to set that up. TIA. 

It depends how you’re generating and printing your invoices from field services, but you can set the default templates on the Mailing & Printing tab of the customer record.  If you are generating/emailing from the Receivables area, then update the “Invoice” report, if you are generating Sales Order Invoices, then update the SO Invoice item.  Below is a sample from the Sales Demo database.
