When I try to unclose an appointment I get the following message. Another process has updated the ‘FSAppointment’ record. Your changes will be lost. Is there any way to stop this from happening? It is preventing me from being able unclose appointments.

Unfortunately no, you need to unclose the appointment to get taxes recalculated by the external tax provider.
This is the known issue and it will be fixed in future updates of Acumatica, see this knowledge base article for more details.
