We want to build a self-checkout feature where customers can scan a product barcode to retrieve stock/inventory item.

Hi what you are looking for the API can handle. I would suggest you review the training documents on how to setup and use this.There are some eaamples in there and you can use something like Postman to build some samples calls and see some results
