I am trying to access the Ship-to Address information seen on the invoice Addresses screen here:
However I don’t see an available endpoint for that in the API. How do I pull this info in the API?

Since ShipTo address is not present on default endpoint, you are gonna need to extend Default endpoint to add ShipTo address to your entity. Here are a couple of links on how to extend endpoint:
