Any idea what will happen to the custom fields or attributes and user defined fields if you upgrade Acumatica to any new version? will they be destroyed (I don’t think so) or you need to remapped them or nothing will happen to them they will stay functional as they were?

You have to validate that any customization is compatible with the newer version of Acumatica. When upgrading, all customizations will be unpublished, and you will have to republish them. That being said, there should not be any issues with custom fields or user-defined fields when upgrading.
